1 cup flour
1 cup milk
2 eggs
1 1/2 tsp vanilla extract
In a medium bowl, whisk all ingredients together.
Heat frying pan over medium heat. (I don't oil/butter the pan because I think it makes the crepes rubbery) When pan is hot, add 1/4 cup of crepe batter and swirl it around pan so the batter coats the surface evenly. When edges start to firm up, turn over and cook for a little longer. There should only be light browning on the crepe.
Remove crepe from pan and serve immediately. I usually serve with fruit and cream cheese dip, chocolate or caramel. You can also fill with savory ingredients such as eggs and sausage.
